What started in a Leslieville back alley has become one of Canada’s premier coffee roasters, complete with a state-of-the-art production facility, multiple cafés, and a cult following. Pilot’s approach is data-driven and quality obsessed. They use Loring roasters for precision control and work directly with producers to source exceptional microlots. While their “Heritage” espresso blend is a dependable go-to, their high-end offerings are where things get wild. Limited-edition releases like the Ethiopia Ardent Gesha or Colombia El Obraje Anaerobic routinely push past the $70 mark for 250g, showcasing rare varietals, experimental fermentation, and mind-bending flavor clarity. The Adventure Series showcases more experimental coffees, including anaerobic fermented lots with bold tropical notes and floral aromatics. Anchored places a strong emphasis on transparency and works closely with producers. They also distribute widely throughout Atlantic Canada, bringing craft coffee to places where good beans were once hard to find.
