With Halloween just around the corner, I have really been feeling pumpkin-themed foods lately. Pumpkin cake, pumpkin lattes, mashed pumpkins – you had me at pumpkin! Additionally, with October 26 being National Pumpkin Day, what better way to commemorate our favourite harvest squash than with a recipe (and giveaway) in celebration of all things pumpkin?
When I was growing up in Alberta, it was always snowing by this time of the year. Perhaps my memory of this is why I find a hot bowl of spiced soup so especially comforting. With pumpkins in season, Elin and I (but mostly Elin) are going to show you how to combine our two favorite Fall staples, pumpkin and soup, to create the perfect Fall comfort food: Spiced Pumpkin Soup. Serve it in these adorable Staub pumpkin bowls from our friends at Zwilling Canada and you’d be hard-pressed to find anything more festive!

Spiced Pumpkin Soup
Ingredients
1 can pumpkin puree (796ml)
5 cups stock (chicken or vegetable)
1 cup 35% whipping cream
1 tsp pumpkin spice mix* (see the Notes below on how to make your own!)
1 tsp red pepper flakes (if you like spice, I would go up to 2 tsp)
1/2 tsp salt
1/4 tsp pepper
maple syrup (optional)
Instructions
1. Over medium-high heat, add the pumpkin puree, stock, cream, pumpkin spice mix, salt, pepper, and red pepper flakes into your Staub Pumpkin Cocotte 😉
2. Stir
3. Bring to a boil, whisking
4. Reduce heat to medium-low
5. Simmer about 5 minutes, whisking
6. Taste, adjust salt & pepper
7. Serve in adorable Staub mini Pumpkin bowls
Optional: Drizzle with maple syrup (I liked the maple syrup with it, one of our tasters preferred it without)
* Notes: To make the Pumpkin Spice Mix – mix together
1. 3 tbsp cinnamon
2. 1 tbsp ginger
3. 2 tsp nutmeg
4. 1 tsp ground cloves
5. 1 tsp ground allspice
Store in an airtight jar.

Me too! They have the cutest cocoette and bowls for all different occasions. Last year they had this one cocoette for Tomorrowland – it was soooo pretty! I wish I picked one of those up! FYI – there is a 55% sale on the pumpkin bowls right now if you’re interested. Kitchenware sales are my weakness!

Surprisingly, this was also my first time trying pumpkin soup. It was very similar to butternut squash soup though – so creamy and hearty! Good luck!
